Hello guys, it’s getting colder and I’m always feeling more hungry in the winter. Do you guys have the same ‘problem’?
I asked my healthy friend, Veerle, for a powerful breakfast with make me feel less hungry. She is a big pumpkin fan (check her pumpkin smoothie here) as you guys may have noticed . This time she shares healthy pumpkin pancakes with us.
- 80 gram pumpkin pieces
- 1 egg
- 100 gram spelt flour
- 100 ml rice milk
- coconut oil for the pan
- 1 teaspoon cinnamon
Peel the pumpkin, cut it into little pieces and boil the pumpkin for about ten minutes. Then combine all the other ingredients and the pumpkin in a blender and blend until the mixture is smooth. Heat a pan and add some coconut oil in the pan. You can make 1 or 2 pancakes, but I prefer to make little pancakes. Quick, easy and delicious. Enjoy!
